“In Montorio, every family knows how to make bocconotti!” locals proudly proclaim. Even today, this small yet delicious pastry reigns supreme in Montorio’s confectionery tradition, marking festive occasions and standing out amidst the region’s rich Christmas culinary heritage. They are made exclusively with genuine, locally sourced ingredients, and their most celebrated feature is the unique filling: sclucchiata, a hand-crafted Montepulciano grape jam. This exquisite preserve is meticulously prepared by manually pressing the grapes to remove seeds while preserving the skins, which lend the jam its distinctive texture—all without added sugar.

In this unique workshop, Dilva Panzone will showcase her expertise in crafting and shaping the renowned bocconotto montoriese pastry—a skill she learned from the women who surrounded her as she grew up. From childhood, she watched, and as a young girl, she actively participated in collective baking sessions in family homes, where women gathered to cook for the community’s most significant celebrations: weddings, baptisms, and communions. Not coincidentally, bocconotti are also known as the “wedding pastries”.
Through Dilva’s hands, generations of Montorio’s women will pass down their treasured techniques, revealing the delicate touches essential to achieving the perfect bocconotto. One of its defining characteristics is the shortcrust pastry (pasta frolla), which must be light and crumbly—a texture achieved by baking the pastry in special, handcrafted tin moulds. “Without the right mould, it is not a true bocconotto,” the local women insist. Many families still keep sacks of personalized moulds, once marked with their initials, to avoid mix-ups during communal baking sessions. The delicate balance between the crisp pastry and the right amount of filling creates the hallmark of a perfectly baked bocconotto: the lacrima (tear), when the jam gently oozes through the top like a tiny, sweet volcano.
The workshop will take place in the parish kitchen, generously provided by Father Paolo, the town’s parish priest. Participants will witness the entire process of creating the beloved “tearful pastry” and will have the chance to get hands-on experience in crafting their own bocconotti. Dilva will reveal the secrets behind the delicate filling mixture, followed by an in-depth demonstration of shortcrust dough preparation, moulding techniques, and the crucial baking process. As the aroma of freshly baked bocconotti fills the air, participants will share the joy of tasting their creations and take home a bag of these delightful pastries!

Dilva Panzone
Dilva Panzone, a retired professor of history and Italian literature since 2006, has always been
deeply engaged in cultural and social initiatives. During her teaching years at the B. Pascal
Technical Institute in Teramo, she tirelessly devoted herself to research, volunteer work, and
organizing countless educational trips, earning the admiration and affection of her students. She has
become a key figure in preserving and promoting the historical and social heritage of the Teramo
and Montorio communities. Dilva is also a prolific author of books and travel guides covering local
toponymy, historical-artistic heritage, and religious traditions. Her works include Da Montorio in
Europa. Piccola Guida di Montorio al Vomano (Media Edizioni, 2003), Lotte sindacali a Montorio
e nella Valle del Vomano 1945-1951 (Comune di Montorio al Vomano, 2012), and The Traditional
Cuisine of Montorio al Vomano. Between Customs and Traditions (La cucina tipica di Montorio al
Vomano. Tra usanze e tradizioni – FAI, reprinted four times). She collaborates with FAI (Fondo
Ambiente Italiano) and the Commission for Toponymy in Montorio, a town at the gateway to the
Gran Sasso and Monti della Laga National Park.
For her cultural contributions, she was awarded the Ponte d’Oro prize. Her books are never priced;
all proceeds go to charity. The revenue from her latest publication has been entirely donated to the
Parish of Montorio al Vomano.
